Horchata. A white drink made from ground rice and almonds, topped with chopped pecans, decide cantaloupe and red cactus fruit marmalade

A large, thin, chewy corn tortilla that is seasoned with asiento (This soft, pale brown paste, made from the fat used for frying chicharrones, is an important Oaxacan condiment), then coated with black bean puree and topped with quesillo (A flavorful string cheese formed into long ribbons that are wrapped in a ball) and vegetables and cecina enchilada (chile-marinated pork)
